Zucchini Noodles w/ Pumpkin Seed Pesto
I used a julienne peeler on the zucchini to create the noodles. I blanched them for 1 min in salted, boiling water. For the pesto, I used my Cuisinart Food Processor & mixed basil, pumpkin seeds, a little lemon juice & olive oil.
