Italian ‘Sausage’ & Mushroom Pasta. The pasta was tri-colored; made out of rice, spinach & beets. I added a small spinach & mushroom salad with Greek Goddess Dressing, with some Pellegrino of course. The perfect dinner & ending to this hectic day :)

I feel energized, health-concious, and I can really see this as a lifestyle change. A plant-based diet is where it’s at.
Zucchini Noodles w/ Pumpkin Seed Pesto
I used a julienne peeler on the zucchini to create the noodles. I blanched them for 1 min in salted, boiling water. For the pesto, I used my Cuisinart Food Processor & mixed basil, pumpkin seeds, a little lemon juice & olive oil.
Dinner :) Feels good to make time to cook again
